Potato Dumplings

Peel and cut up potatoes into chunks.

Boil until done.

Smush up like you were making mashed potatoes but don't add anything.

Cool.

Add one egg and flour until dough-like, non-sticky consistency is formed.

Roll into approximately one inch balls.

Drop into boiling water, when they pop to the top, they're done.

Serve with gravy, ideally. The pork gravy Paul made was FANTASTIC!!!

Those sound great! How can you not like those? That's essentially perogy-balls. Minus cheddar cheese, I guess.
